Would the 5700X3D at $244 be a better choice for gaming? I assume for other tasks, the 5900X would be superior.

Gaming and even light productivity, if upgrading, I'd personally go with the 5700x3d 10 times in 10. You want the high l3 cache and you also don't want to be crossing ccds.
Of course, new build I'd just get a 7600 (which will be comparable to 5700x3d) to tide me over and wait for new 9000 am5 this summer
