Kuhn Rikon 8-Inch Kitchen Shears
These shears are spring-loaded: The cutting action only involves squeezing them closed. Testers with large, strong hands found them liberating (no holes to shove your fingers into), but smaller, weaker testers struggled. A plastic safety sheath is necessary to keep them closed.
Edit: Be careful when you're using these because they are sharp enough to cut your finger to the bone if you happen to have it in the way. I also have one pair that I just use for cutting up cardboard boxes and stuff like that. Definitely not to be underestimated when you're in a hurry. Definitely not for kids, and should be kept out of reach.

I have 15 or so of these for various uses. They keep themselves closed 100% on their own. They are razor sharp, they stay sharp, and I haven't found anything close to this good for what you pay. You can't beat them for use in the shop, garden, junk drawer, general use. They are also the only thing I use to cut my meat with when grilling, or inside for that matter. Awesome deal in my book.

The spring action is not hard at all and a huge time saver if you have to make a bunch of cuts. There is a locking mechanism in between the handles that you rotate to keep them closed.
Thanks for your input. How easy are they to clean?
These look similar to those cheap trauma shears that cut through anything, so I'm getting a set for the kitchen and garden.

I still bit on the deal though. I will use them for non-food thing around the house and garden. The spring will be difficult to clean and not being able to come apart make it unsuitable for food.
