Can this be converted to a regular grill? Do I just buy a set of grates and I should be done?
I like the idea of a griddle, but would also like the option of converting it to a grill.

No, you cannot just slap grates in place of the cast iron flattop, because the have different bellies, burners, heat distributors, catch pans, mounting... but the opposite is is true that many companies make grate grills with griddle top inserts in place of, alongside, or sitting on top of the grates.

I have been tempted to get a griddle grill but I remind myself that it is a griddle and not same as cooking on a grate. It seems to me it is better go get a regular grill and put a large cast iron griddle on top if you want to make large number of pancakes, eggs or bacon...

Not trying to sway you one way or another, but I was in the same dilemma not too long ago when I realized I could do anything that I could do on a grill that has grates on a griddle (with the exception of making grill lines). However there are things I can do on a griddle that I can't do on a grill. The heat transfer is not efficient enough to put something like a cast iron pan on a grill and have it work like a griddle I've tried it just doesn't work well. I even got a Weber griddle insert to put on top of the grates that covers the whole grill and it still struggled to really get it up hot enough. Just one person's perspective.
