Ive had my windows plex server running off USB jbods like this for almost 10 years now. No issues.
No one who is serious about protecting their data runs SATA drives over USB.

i had a couple 2TB hard drives laying around for a few years since i moved to these USFF Dell computers.
I had 3 external drives connected to this computer but i found a cheap version of this on Temu. I shucked the 3 external drives and installed it to the this 5-bay sata to usb device. then added the 2 2TB drives. it works perfectly for my needs. I only use these drives for Plex. I think i have 21TB connected to this thing. all running on one usb 3.0 cable. it works for my needs. obviously anything i feel is worth securing, i backup on the cloud and across these drives.
