Cheapest CL30 64GB kits start at $200-210 currently. So this is cheaper and higher capacity, and yet marginally slower in terms of latency. In gaming, about 1-4% difference in FPS, more towards 1% of less as you raise the resolution up from 1080p, and to zero once you're GPU limited.

It's worth noting that there are 64 GB DIMMs now on DDR5. I built some systems for work that had 256 GB of RAM paired with 9950X and they're great. It's nice to finally have this capacity per DIMM in a consumer-class system, but obviously, very few people need this amount of memory.

As someone already mentioned, the performance on the 48GB and 64GB DIMMs is slower than the 32GB and smaller DIMMs. You can read online if you want a more thorough explanation. If you have 4 DIMM slots and don't need more than 128 GB total, stick to 32 GB DIMMs.

For those training models in need of more ram however what is the trade off of the 2-channel memory controllers in the x3d chips running 4 dimms instead of 2?

I'm kind of dealing with this myself. 128GB is ~130$ more than this deal, and 128GB dual DIMM >= 6000mhz is nearly $400, but I kind of hate buying DIMMs I already have 64GB in place that I'd be obsoleting.

Yeah, your timings are considerably tighter so lower overall latency. If you don't need more memory then this kit would just hurt performance.
It's also weird seeing DDR5 and DDR4 prices start to nearly match. A 2x32GB kit of DDR4 I got for $70 just a couple months back is now over $150
