I have Hakko FX888DX-010BY - Digital Soldering Station. It's way better than any sub $25 60-80watt garbage soldering irons on Amazon. Hakko keeps the heat way better, which allows you to keep from getting connectors or wires hot for too long.
I've soldered larger items/piping but will this work fine for beginner soldering or should i look for a better model and grow into it?

Could you please give examples of good value models?
I'd be willing to pay ~$100-150 for a quality station.

$1000 like someone suggested above is too much for a hobbyist IMO. You gotta be making money with the tool at that price range.
