Easystore is the name Best Buy uses exclusively for their WD hard drives

Elements is the WD common name sold everywhere else

BB does this so it doesn't have to price match, different branding, different part numbers

Amazon's price match is only for Prime members. I'm not a Prime member so Best Buy will get my money and Amazon will always be my retailer of last choice.

Would it be worth it to take the drive out and put it into a different enclosure. By using it as is, do you risk losing your data if the controller/ main connection fails? Or can you just take it out put it into a new enclosure. Preferably with a type c port.
My main purpose is archiving photos and some files.

If you plan to use it externally, I see no reason to swap it into a different enclosure. The SATA-USB bridge WD historically used in these is one of the best I've seen. You can shuck the drive (or put it in a different enclosure) without data loss. However, subsequently putting it back into the WD enclosure can damage the backup GPT (partition table) header. Windows doesn't seem to care about this (and may even silently fix it) but Linux tends to throw a fit (but it can be manually repaired there too).

I made a deal with myself to not buy any drives smaller than 20 TB for the server. And it's worked out really well because I don't have to fret over all these good deals on smaller drives.

There is absolutely no functional difference between the two. There are cosmetic differences, and the product lines are marketed, distributed, and sold differently. The hardware is absolutely the same. You may be thinking of the difference between EasyStore/Elements and MyBook.

The Elements version is the same price direct from Western Digital also. They offer an extra year of warranty.
