Tobasco hybrid siracha was pretty good too. I usually put that on american food. Then Rooster sauce for the other stuff

Agreed about Huy Fong. I don't like the Tabasco version. It has a cloying sweet note, like a hint of Karo.
The one from the people who originally grew the HF peppers isn't perfect, but it's better...
Low bar. Underwood (the pepper farm) is better.

Nah, totally different, not as spicy, and also the color is super inconsistent now and brownish half the time.

Tabasco Sriracha is preservative free. Doesn't have the off taste associated with it. I prefer Tabasco Sriracha. I also keep it in the fridge.
Underwood is the farm that used to supply the ripe jalapeños for Huy Fong Sriracha. There was a very public falling out (Huy Fong got greedy, based on the court documents) and now Huy Fong uses whatever peppers they can get cheapest, quality be damned, and Underwood is making their own sauce.
