It's happened to me several times. I have a Walgreens very close by and after it being canceled, I've gone to the store and see the items right there, in stock.
Sucks that the coupon goes to waste once they cancel it and it won't get back on the account.

Is there any way to confirm it was the employee that cancelled it? Would love to show that to the store manager as they called me last time after I was irate that my order was cancelled so quickly. I wasn't able to answer but thinking about going down tomorrow in person to show them this is now the second time this has happened and it's simply not right. I don't care if 9 out of 10
Items are out of stock, fill what is in stock. I've often thought the same though that they just don't want to make the effort to fill the order. It's not like Walmart where they have dedicated employees for filling online orders so I'm suspecting this is why.

I don't think there is a way to confirm my theory. You could try to place the order in the store and see what the employees do when they receive the order 😂
