Ceramic has thermal loss also. Should be preheating with hot water before adding grounds if you want to get all James Hoffman about it.
Of course every material has heat loss, but theres no question that SS conducts heat much much faster than ceramic.
I put my ceramic dripper on top of my kettle as the water boils to heat it with steam. Ceramic definitely does lose some heat, but all materials do and its the best option

It does have more thermal mass, I'm wondering if you're confusing thermal mass with thermal conductivity. The thick ceramic models take longer to get up to temperature because they have more thermal mass, more material to actually heat up. But they also retain that heat for longer because of the fact that more energy is stored in that extra material, and because it doesn't conduct as well as stainless. The steel funnel will get up to temp very quickly because of the fact that it doesn't have much thermal mass and conducts heat very well, but that also means that it will continue to draw heat from the brew and lose it to the surrounding air much quicker than ceramic.
