For my bike, I ended up buying a relatively cheap (~$50) motorcycle specific android auto head unit from amazon, a fuse tap kit, and just keep my phone connected to my pocket, using android auto to navigate. It's permanently mounted to my bike and only turns on when the bike is on, I actually prefer it to a phone mount (25% of the time I left my phone on the bike after my trip).
All the prices have gone up a bit but this is an example of what you're looking for, needs to specifically say "motorcycle", meaning it's built to be in the elements a bit, waterproof, etc.
Depending on the fuses your motorcycle uses, you'll want either a normal, mini or micro fuse tap kit like this: https://www.amazon.com/Mini-Fuse-...188&sr=8-1
The positive goes to an accessory fuse (if you have a USB port, or an empty fuse slot), the negative can go straight to the battery or bolted to your bike's frame. This way it only turns on when the bike is running.
Connect everything with crimps, not solder (solder shakes loose, should never be used for vibration-heavy workloads).
Then just pair your phone to the device with android auto, pair any headsets you use while riding to the head unit, not your phone

I replaced the knob with a nylon locking nut so that it requires tools to remove, and someone can't just untwist and yank it off the bike.

But overall swiping is not great, and my rec. is definitely to get everything setup, audio going, navigation started when you're riding. Touchscreen is good for tapping "home" or "work" and "start" on google maps, or tapping my podcast app and hitting "play" then tapping back to maps.
If you buy through amazon, one thing you can do is put a 12v battery on a trickle charger, connect the head unit to the battery, and test it out before the full install procedure to make sure you like interacting with it before going through with the full install; and just return otherwise if not.
