Okay. Prepare to be educated. Those two ingredients couldn't be further from random fillers than you could imagine. Please don't get this confused with food coloring or artificial flavors. Soy lecithin is actually a supplement and has a lot of health benefits, it also helps as an emulsifier, which helps mix oil and water together (since oil and water don't mix) it does a lot of other great benefits to the dough texture and handling of the dough. Xantham gum is great for gluten free mixes to act as a gluten alternative source, it helps provide structure and elasticity and improves texture. Something very common in gluten free baked goods.
