I bought one of these instead, and it's worked perfectly. Only a month, but no problems at all. https://www.amazon.com/dp/B0D1XLN...in_title_1

Has no USBC connectors? Other than the power input. That's kind of useless for a docking station

The issue was some of the M series not supporting muti-display without some type of hacky work around with splitting the signal up.

The newer ones I believe now support multiple displays but no one can say 100% it works all the time.

Mine kinda works but adding power completely kills all ports. Not sure if it's because I'm using a 90W brick instead of 100W, but I thought it would allow lower wattages especially since my laptop doesn't even need 90W

It's more than just that. Yes the base M1, M2 and M3 processors only support two displays. In the M1 and M2 laptops one of those is always connected to the internal display so they only support a single external monitor. The m3 laptop can disable the internal display so it can drive two external displays but that isn't the issue with most of these cheap "docks". These cheap docks us DisplayPort MST (multi stream transport) to send the signal for 2 or 3 different monitors over a single port. Mac OS does not support that DisplayPort feature. So even Apple laptops that can support multiple external monitors will still only support a single monitor on these types of docks. To get multiple monitor support you need an actual thunderbolt dock which is generally much more expensive.

The listing is a little confusing because some of the images do mention Macs as working while the details says not compatible. I assume the dock would work fine but you'd only be able to use the 3 monitor ports in mirror mode so they all display the same thing so basically only a single monitor can be used.

The other odd thing that comes up is DisplayLink which is probably simplest to see as a USB based software video card. That allows you to bypass the limit on the number of monitors or simultaneous external monitors but requires drivers which for current MacOS platforms include somewhat scary security warning.

Terrible customer service. When my device died in warranty, they told me they no longer have that model but will give me a coupon for a few dollars off if I buy a new device. what a scam, why honor a warranty when you can just get someone to buy a new one.
