I also believe I saw the 1000 v2 in the past for $350, but when I went back and tried to find it in SD, I could not get it to show up. I think it was on sale for $450 on AMZ with another $100 coupon, that's what I remembered. So I'm going to agree with "MellowApple" that it has been at that price of $350 before. I remember thinking at the time that perhaps they were all headed downward in price, but then nothing else really moved down to that pricepoint. It could be that was right when tariff concerns kicked in and stabilized power station prices (up) a bit.
but I'm going to support the comment that this was at $350 at one time. When or if it will be again, uncertain.
I've been waiting for $350 for this unit or a Bluetti equivalent.

1500w is not enough for microwave, ninja grill, instant pot and other kitchenwares

All 1000wh units from other brands are 1800+w(delta 2, ac180 DJI 1000 and so on), I think Jackery made a huge mistake choosing 1500w inverter for its 1000wh line. They realized it, and patched it with new model 1000 plus

None of those things use more than 1500 watts. 1500 watts is the limit for continuous power draw. You won't be able to use anything else at the same time, but it will work.
