What are these good for? Seems like it's overpowered for general computing but underpowerd for gaming

These are actually pretty good for gaming, depending on what your expectations are. I have a 7840 laptop with the same iGPU, and play a lot at 720p/1080p. It's already really good for emulation, and setting up a Bazzite box.

For heavier gaming, it's a nice system to stream over wifi/ethernet to, since it's got a fast processor and good media decoder. I stream my xbox and gaming server to at 1080p and 1440p with no issues over wifi.

This box would also make a nice little home server/media service since it's got 2.5G ethernet and a good iGPU for transcoding.

Add $140-$150 for 32gb DDR5 5600 and cheapest 1tb 4.0 nvme... Might need to get a Windows license too...

Still, it's decent for the specs. Wish it had Oculink though. USB4 is better than nothing.

It has two 2280 nvme slots. It won't be pretty but you could replace one of them with an occulink adapter and drill a hold in the damn thing. This is a heck of a price for the processor/igpu.
