How to use these for rear surround and the arc? Do you hook everything up using speaker cables with A/V receiver?

Sonos is all wireless except for the Arc HDMI to tv and power cables to each speaker. You go into the app and add speakers to the arc selecting the left and right one as the surrounds.

Sonos is completely wireless, that's their advantage, you just connect to power and configure everything through their app. They have great sound although not audiophile by any means.
All that said, if you're an Android user be aware their Android support doesn't have feature parity with iOS, at least for me that's always been a deal breaker.
