Keep a bottle/jar of whole nutmeg in the freezer, take one out as needed, grind using a Microplane grater. May not seem worth it when baking, but any dish that has nutmeg added at the end (like white sauce pastas), you'll notice a huge difference with freshly grated. It makes the flavor pop.
