Wondering if this would sufficiently power 8 in-ceiling speakers splitting 4 and 4 to each channel? My first opinion would be probably not but it would be a simple amp to use.

On each channel, you can wire two speakers in series, another two in series, then wire those pairs in parallel. The total impedance would be the same as on one speaker.

Keep in mind, with 4 speakers on one channel, each speaker would only be getting 25 watts each. That might be fine if they are 4 really efficient lower power handling type speakers but 25 watts per speaker most likely isn't going to cut the mustard for someone who likes to crank thinks up to rock out every once in a while.
