They specifically recommend not to use bacon grease for the initial seasoning. Salts and nitrates being the reason why.
You can use any other high heat oil to do this though, but for the initial seasoning this works really well. Just did one recently with this and works really well. Even better at this price.

This stuff works well. I switched to this from Peanut Oil since it protects the griddle surface from rust better.
