I'm not sure if this applies to these three models but I will assume it does since it's the same company. I bought the three pack M9 and only after buying it, realized that you cannot choose what wifi channels to use. I think it's pretty bad that you can't just go in and move your wifi to a less crowded channel on your own.

I hope not for its annoying. I live in a major city where I am competing with numerous neighbors and want to choose my own channels that I see are less crowded.

3-pack Deco M5 has been at $140 for a while. Got it a month ago and deployed in a two-story concrete-wall house where a single router was not enough. (and wiring a pair of EAP245's was not an option)
Happy with it for the most part, except that you have to do the setup through the app instead of the old fashioned web. Good thing is that I can monitor the network from anywhere.

... and, there is little to none customization in regards to channel, 20/40/80Mhz selection, and the like. ... it's a WYSIWYG kinda router... "click next-next-accept the defaults- finish" Done.

For the M5 and S4, can the 3 pack be split and setup in separate homes? I plan to get 3 pack, keep 2 for myself and 1 at parents house (smaller sqft).
I would need them to act as router and mesh at my home and router with WiFi at parents home.

The M5 can be used as 3 separate routers/wifi, or in any combination. So yes you can split the system however you want. And I have the M9 plus and love it, used it for multiple family members now as well. I run the wired backhaul on all of them to give the maximum wifi at each area. ( I believe the M5 does that as well)
